I really don't know if this is a good thing, or a bad thing.

I am thinking about building a bike round a volvo V6 engine, and am
concerned about my sanity. I have several more troubling new year
resolutions. Please help.

Unsupercharged merlin - 1000 hp at a guess.

1000/6 = 160hp at a guess

Well that was when when it had perfect primary and,
secondary balance.

Chopping off the 10 balancing cylinders may have made
it impractical to use max rpm.

Would need interesting gearing too. Maybe 3000 or 3500 rpm.
160 hp - 150 mph? Direct drive first and up from there?

Probably was hard to see where you were going.
However - maybe the ladies would like it? - And Harley
riders presumably would be ecstatic.

Fine thing though - to look at.

I did see a rover SD1 with a merlin in it a couple of years ago.
Guy drove away from the show - on the road.
Was a tank one, 600hp at the most.
