TC88 EFI to carb help needed

A round of cold ones to you all.

I have gotten myself roped into a project build for my boss. He has a
TC88 from a 05 Roadking that he has decided needs to be in a bike. It
was pulled from his King with about 500 miles, when he had a 121 horse
(I've seen the dyno sheet) motor put in. It is a complete engine,
minus EFI and electric. Those were used on the new motor.

I need some help deciding how I'm going to get this running. I am a
Harley newbie, but am proficient in wrenching everything from old VW's
to 5000 hp marine diesels. I would like to go with a carb setup, and
need opinions on brand/size. Also, need options on the electric end
Nothing wrong with the stock CV that comes with the carbbed
models. Should be fairly easy to find used, at a decent price. If
you don't mind spending more, a Mikuni HSR42 is a real nice carb. The
intake manifold may be a little harder to find, unless you know
someone who's changed the heads and has the stock one.

(alternator, ignition, etc) to work with the carb. Any one with
Stock H-D stuff works well here too. Alternator will probably
need to be bought new, since used is real rare (and of dubious
condition).
Piggy backing here:
I still have a CV manifold from my 99 RK. I installed the HSR45. I can
put it on the EIII auction if I can find it.

experience changing EFI to carb would be appreciated.

Cheers!
